Rich and plummy, with a deep color and remarkable strong
structure, this is one of the best of it's type.
Experts consider 1908, 1927, 1935, 1945, 1963, 1977, and 1985 the
seven peerless 5-star legends 1985 Vintage - Samplings show that most
'85's are luxurious wines of intense character, deep color, and impeccable
breed. The incredibly luscious Graham '85 is the flagship.
Quite sweet with firm tannins and fresh acidity, almost like lemon juice-it
freshens the palate in the same way as a sorbet. Powerful syrup of figs and
fresh date nose.
Concentrated black fruit nose with tar and floral hints also present. Very
sweet at first, but with enough acidity to balance that, and with enough
tannin and fruit concentration to enable this wine to continue to mature for
many years.
Pedro Domecq Sibarita Palo Cortado 12.
Palo Cortado is the rarest of all Sherrys. It begins life as a fino, then, for
as yet unknown reasons, discards its ìflorî to evolve to a amontillado, then,
outgrowing that ends up acting more like a oloroso with a amontillado
finish. Pedro Domecq has a nose of roasted walnuts, with substantial
underpinnings of cedar, juniper, and herbs. On palate it's medium body,
perfectly balanced, whistle-clean, and downright delicious as the walnut
comes to the forefront, then recedes in a gentle herbal aftertaste that
lasts & lasts. A study of nuance and elegance, first class. My favorite
sipping beverage! We serve it chilled from the white wine section of
our Cruvinet.
